Amphiphilic compounds are molecules that possess both hydrophilic and lipophilic properties (Figure 1). They are also called amphipathic compounds.

Some common amphiphilic substances are soaps, detergents, and lipoproteins. Due to their nature, some of them are used asemulsifiersto stabilize emulsions.
